Viennese waffles

Recipes for an electric waffle iron that bakes Viennese waffles. Tasty, fast, easy.

The preparation process is the same for all recipes, the composition of the waffle dough can be different - sponge (like soft cookies), sponge with butter (richer taste) or shortbread (bright taste, crunchy). Additives may be added to enhance the taste. Everything is delicious!

Compound

1. Biscuit Viennese waffles (plain)

~for 4 waffles (if divided into separate cookies - 20 pieces)

  • Eggs – 5 pieces;
  • Sugar – 1 glass;
  • Salt – 1 teaspoon;
  • Water (or milk, kefir) – 5 tablespoons;
  • Cognac or wine – 1 tablespoon (can be replaced with juice or zest of 0.5 lemon or orange, or ground cinnamon or ginger – 1 teaspoon);
  • Flour – 1 glass;

For the option with butter, add vegetable oil - 1/3 cup or butter - 50-70 g.

2. Lemon Viennese waffles (butter sponge cake)

for 6 large waffles (can be divided into cookies - 30 pieces)

  • Butter (pre-softened) – 100 g;
  • Egg – 2 pieces;
  • Lemon for juice – 1 medium or 0.5 large (or 1 orange);
  • Water – 2/3 cup (165-170 ml);
  • Sugar – 1 glass;
  • Salt – 1 teaspoon;
  • Flour – 1 cup.

3. Waffles with melted cheese (sweet)

makes 8 waffles or, if divided, 40 waffle cookies

  • Eggs – 2 pieces;
  • Sugar – 1 glass;
  • Water – 1 glass;
  • Vegetable oil – 0.5 cups;
  • Flour – 2 cups;
  • Soft salted processed cheese (spread with a spoon, for sandwiches) – 100 g; if you only have hard melted one, grate it on a fine grater and add it to the dough. If you want a more cheesy taste, add 200 g of cheese.

4. Orange wafers (butter sponge cake)

for 13 waffles or, if divided, 65 waffle cookies

  • Butter – 1 pack (180-200 g);
  • Water – 2 glasses;
  • Salt – 1.5 teaspoons;
  • Sugar – 2 cups;
  • Orange – 1 (squeeze juice into dough);
  • Flour – 2.5 cups;
  • Egg – 1 piece.

For all recipes: A little vegetable oil will be needed to grease the waffle iron.

How to cook

  • Prepare: Preheat the waffle iron according to the instructions (I used it for 8 minutes, closed). Open, grease the bottom and top baking surfaces with oil. While it is heating up, make the dough.
  • Bake: pour the dough into the center of the mold (I used a little less than a ladle). Close the lid, pressing down lightly. And bake until a delicious smell appears and the waffles are browned (2-3 minutes).
  • Take off Using a wooden or silicone spatula, transfer the finished waffles to a flat, level surface to cool (a wooden cutting board will do).

And repeat until the dough runs out.

  • Ready-made Viennese waffles can be eaten either whole, large, or cut into separate cookies with a knife.

How to make Viennese waffle batter

  • For simple biscuits: Combine eggs, sugar, salt and water. Mix and beat everything. Add cognac (or whatever you substitute with) and flour. Mix well. Baking temperature is slightly above average (if there is a temperature regulator).
  • Lemon shortbread length: combine softened or melted butter, eggs, sugar, salt, lemon juice, water. Mix everything. Add flour. Mix well until smooth. Bake at high temperature (but slightly less than maximum).
  • For cheese (processed cheese): Combine eggs, sugar, butter, water. Mix well. Add flour, stir until smooth. Add soft cheese. And mix well again. If you have hard processed cheese, grate it on a fine grater and add it to the dough.
  • For oranges (butter sponge cake): Heat the butter with water, sugar and salt in advance, stirring (until the butter dissolves). Cool until barely warm. Combine with flour, orange juice and egg. Stir well.

Orange ones are simply delicious. They have a citrus aroma, and the sour taste is much less pronounced than in lemon ones.

It’s better not to stack the waffles on top of each other, but to let them cool and dry a little individually. This will make them crispier and tastier. The finished waffles need to be cooled, then put into plastic bags and tied.

Waffle batter

Lemon or orange juice (like kefir) adds the right sourness to the waffles, so that you can’t tear yourself away. Without sourness, Viennese waffles turn out more bland.

It is better to add cognac, lemon/orange juice or zest to simple biscuits to eliminate the slight eggy taste.

In general, other biscuit dough is also suitable for waffles, for example, with kefir, as for. just take 1 cup of sugar (6 tbsp for waffles will not be enough). And it tastes better if the dough contains at least 50-100 g of butter (with butter, of course, it tastes better, the aroma is crazy!).

The thickness of the dough is medium. Pour enough batter into the pan to fill it after pressing the batter with the lid of the waffle iron. In simple biscuit waffles, the dough is thicker, almost a whole ladle was required. And in the shortbread lemon ones it turned out thinner, less than 1 ladle was needed for 1 waffle. Try it, you will see for yourself how much you need.
