  • 4.5 kg of cucumbers;
  • 500 g onions;
  • 300 g garlic;
  • 100 g dill;
  • 130 g salt;
  • 30 ml vinegar 9%.

Preparation:

  1. We process the cucumbers as usual - wash them and soak them for an hour. Then dry on a paper towel. We cut them into slices.
  2. Finely chop the washed and dried dill. We clean the onions and cut them into half rings. Chop the peeled garlic with a knife or pass it through a press.

  • 7-8 pcs. black peppercorns.

Preparation:

  1. Wash the cucumbers and soak them for a couple of hours. Then rinse the root vegetables under running water and place them on a napkin or towel to dry.
  2. Cut the cucumbers into thin slices. Wash the peeled carrots well, chop into strips or grate.
  3. We clean the onions and chop them into half rings. Combine all the vegetables in a bowl, mixing thoroughly.
  4. In a separate pan, prepare the marinade: pour in vegetable oil, vinegar, add bay leaves, peppercorns, salt and granulated sugar. We put it on the stove. Heat, stirring all the time, until the mixture boils.
  5. Cool the marinade slightly and pour it over the vegetables in a bowl. Stir, cover with a lid, let stand for 10 minutes.
  6. Let's prepare sterilized jars and lids. Place the salad in clean jars and seal with a key.
  7. Now let's sterilize the jars. Place a cutting board or a towel folded in several layers on the bottom of a wide pan. Place jars of salad in a saucepan and fill with cold water up to the shoulders. Slowly bring the water to a boil, reduce the heat to very low.
  8. Sterilization time for jars: half-liter jars - 8 minutes, liter jars - 10-12 minutes. Then turn off the fire.
  9. Carefully remove the jars of salad and wipe with a towel. Carefully turn over and wrap with a warm blanket. When the preservation has cooled, you can transfer it to the pantry for long-term storage.

Just imagine how amazing this colorful snack will look! Remove seeds and stems from each peppercorn, and then wash thoroughly. Cut the ingredient into long strips. If you decide to add hot pepper to the salad, then you also need to peel it from the seeds and stalk, and then chop it into tiny pieces.

Wash the dill well. Finely chop the clean greens.

By this time, the cucumbers must have become quite juicy. Cut off the ends located on both sides of each fruit. Chop the remaining part into not very thick circles (about 5-6 mm).

Combine all prepared products in a convenient saucepan. Add salt, sugar, vegetable oil and vinegar to them. Mix the mixture with your hands. Leave it for 1-1.5 hours to release the juice.

As soon as enough liquid has formed in the future salad, place the pan with vegetables over moderate heat. When the mixture boils, set it aside for 10 minutes. During cooking, the snack should be stirred periodically with a spatula so that it does not burn and warms up evenly.

After 10 minutes of low simmering, the salad is ready for packaging. Place it in sterile jars, filling them to the very top.

Roll up containers with blanks with lids. Turn the Winter King snack jars upside down and then wrap them well in a warm blanket. Wait for the workpieces to cool completely, then move them for storage in a dry, dark room.

“Winter King” salad of cucumbers with mustard beans

Did you know that mustard seeds are ideal for canning cucumbers? This unusual seasoning makes the fruits beloved by many more crunchy, elastic and tasty. So in this recipe we will use this little trick to make the “Winter King” a truly royal treat.

Ingredients:

  • Mustard beans – 1.5 tbsp;
  • Cucumbers – 800 g;
  • Sugar – 150 g;
  • Apple cider vinegar – 150 ml;
  • Large onion – 1 pc.;
  • Table salt – 25 g;
  • Allspice peas –
  • Turmeric – 0.5 tsp.

Preparation:

Where do you think the preparation of a snack begins? That's right, from preparing the main ingredient. Soak the cucumbers in cold water for 1-2 hours, then remove the stems and cut them into slices about 0.5 cm thick.

Peel and rinse one large or two medium onions, then cut into thin half rings.

Mix cucumber slices and onion half rings in a heat-safe bowl. Add sugar, salt, turmeric, allspice, mustard seeds and apple cider vinegar. The latter, by the way, will give the appetizer a particularly delicate taste with a slight sourness. You can also use stronger herbs and spices, such as coriander, sweet paprika, fresh dill or parsley. The salad will become more fragrant and bright in taste. Mix all ingredients thoroughly.

Cover the container with vegetables with a lid. Leave all ingredients for 2-3 hours. Vegetables should release a sufficient amount of juice, in which they will simmer on the fire. Place the vegetable mixture in its own juice on the stove. Bring it to a boil over medium heat, stirring all ingredients frequently with a wooden spatula. After this, reduce the flame to minimum and cook the mixture for 10 minutes.

Immediately distribute Winter King salad with mustard seeds into pre-sterilized jars. Fill glass containers to the very top.

Roll up the jars with lids, after boiling them for 2 minutes in water.

Turn containers with canned salad upside down with lids and wrap them in a warm blanket. When the preparations have cooled to room temperature, transfer them to a darkened room where they can be stored throughout the winter.
